Local Butcher Closing Easton Location, Staying in Hellertown

Saylors & Co. has been a staple business on Main Street in Hellertown for nearly two decades, and they’re not going anywhere.

However, the family-owned butcher shop and market will close its location at the Easton Public Market this coming weekend, where it’s been operating since August 2020. Saturday, Jan. 26 will be Saylors’ last day at 325 Northampton St., Easton.

In addition to closing the Easton shop, current owners Maria Verzino and Tim Mease will pass the business on to their daughter, Eleni Garzon.

Saylor’s & Company is a landmark butcher shop and market located on Main Street in Hellertown. Although a satellite location in the Easton Public Market in downtown Easton is closing this month, the family-owned business’s Hellertown location will remain open under new management by the next generation.

“It’s important everyone knows we are still on Main Street doing what we do best, producing great quality foods, meats and quality service. We’re not going anywhere. We’ll be on Main Street for a while,” said Garzon.

Garzon said quality of life was a main motivation for condensing the business, and Verzino and Mease will still be involved.

It’s funny because everyone thinks they’re just retiring and won’t be there, and that’s definitely not the case. But they are planning on slowing down and not working as many hours. Tim’s father is 82, and he’s still smoking meat at the farm,” she said. “There is no way you work the way we work and just call it quits… I have a son who is 2 years old, and my mom would love to be able to watch him while I”m at work, so it’s just really a quality of life for all of us.”

How It Started

Garzon grew up on Mease’s grandfather’s pig farm, which was where the business began.

It was a little store on the farm that was open one day a week,” she recalled. “His parents then opened a shop at the Allentown Farmers Market, and my parents opened up a shop on Main Street in Hellertown.”

Garzon has fond memories of making sandwiches with her grandmother at the farmers market in Allentown, and she continued her involvement after the two businesses were combined into one.

When my mom and Tim got married and bought the property on Main Street, they created Saylors & Co. I was in school, but I would help out here and there…even through college, I helped get them on social media, starting to post on Instagram, Facebook…helping with bigger catering jobs, and I’ve always been in some way, shape, or form involved in the family business,” she said. “Growing up with all of it, it just comes naturally.”

Meats & More

The pork and chicken at Saylors & Co. are Pennsylvania raised and farmed, and the family has gone to great lengths to source the best quality beef it can.

“A big part of Tim’s involvement was creating the business for beef and a really great steak,” Garzon said. “For him, it’s always been quality over anything else. The best quality we can find is in the midwest, where it’s a constant grade of prime beef, and we’re still really conscious about no antibiotics and no hormones added.”

Other offerings at Saylors include many different types of sausage, along with a wide variety of prepared foods and baked goods.

In Hellertown, we have a big following for prepared foods as well (as meats),” Garzon said. “It blows my mind that you can come to Saylors and have a well-rounded meal for just about the same price as going to McDonald’s for a Big Mac and fries.”

“It’s always been our conscious effort to make things approachable and affordable, just like having real, whole foods, made from real ingredients, accessible to people who don’t necessarily want to or aren’t able to cook,” she added.

Located at 1105 Main St., Saylors & Co.’s hours of operation in Hellertown are:

  • Tuesday-Wednesday: 9 a.m. to 6 p.m
  • Thursday-Friday: 8 a.m. to 6 p.m. 
  • Saturday: 8 a.m. to 3 p.m.
